Besa joins Eat Spain, Drink Spain, Spain's national celebration of its food and wine, with a short menu chosen the way you'd actually eat in Spain.
Start with Besa's Gilda, an Olasagasti anchovy from the Basque Country wound around a green Cantabrian olive, guindilla and pepinillo, built for a single bite, order two. Then Pan Con Tomate, good oil and ripe tomato pressed into toast, left simple or topped with Paco Lafuente razor clams from Galicia or hand-filleted Olasagasti anchovies. And the tortilla, confit potato and slow-cooked onion set soft with Galician kombu piquillo folded through.
Alongside it, a four-glass wine flight that crosses the country a region at a time, a saline Albariño from Rías Baixas, a Verdejo from Rueda, a Garnacha and Cariñena from Montsant, a Tempranillo from Rioja. Small plates, plate after plate, and every reason to stay for one more.
