AALIA enters an exciting new chapter with the appointment of Adam Wolfers as Executive Chef, marking a defining moment in the restaurant’s evolution.
Since opening in 2022, AALIA has established itself as one of Sydney’s leading dining destinations, earning two Good Food Guide Chef’s Hats and a place among the World’s 101 Best Steak Restaurants 2026. Named after the Arabic word for “the highest point,” AALIA has always been driven by a singular vision: to elevate Middle Eastern and North African cuisine to its most refined expression.
The arrival of Adam signals a continuation and deepening of that vision.
With a career spanning some of Australia’s most respected restaurants, including Gerard’s Bistro, est., Monopole and Yellow, Adam brings a thoughtful, produce-driven approach shaped by both local and international experience. His time in globally acclaimed kitchens, including the three-Michelin-starred Quique Dacosta Restaurante in Spain and Wylie Dufresne’s WD~50 in New York, has informed a style grounded in both technique and storytelling.
Most recently, as Group Chef at Anyday Hospitality, Adam played a key role in shaping the culinary direction of Agnes, Same Same and Bianca — further cementing his reputation as one of Australia’s most considered and forward-thinking chefs.
At AALIA, Adam will work alongside Head Chef Emre Kilic to define the restaurant’s next era. Together, they will build on the foundations that have made AALIA what it is today, while introducing a new layer of perspective and creativity.
“My food philosophy has always been rooted in the connection between heritage and cooking,” Adam says. “AALIA presents a unique opportunity to explore that relationship through a lens that is both deeply respectful and progressive.”
In the coming months, AALIA will unveil a new menu developed collaboratively with the team, an evolution that reflects the restaurant’s continued commitment to excellence.
