AALIA has been awarded two Good Food Guide Chef Hats consecutively since opening in 2022, and was named Gourmet Traveller’s NSW Restaurant of the Year 2023, as well as #14 in the World’s 101 Best Steak Restaurants 2026.


about the chef
The culinary team at AALIA is led by Executive Chef Adam Wolfers, whose food philosophy is rooted in the deep connection between heritage and cooking. Wolfers brings a career shaped by some of Australia's most respected kitchens — including Gerard's Bistro, Monopole and Yellow — alongside international experience at Spain's three-Michelin-starred Quique Dacosta Restaurante and Wylie Dufresne's celebrated WD-50 in New York.
Drawn to the lesser-known regions and ingredients that define Middle Eastern and North African cuisine, Wolfers approaches each dish as an exploration of culture and memory. Working in close collaboration with the AALIA team, he continues to honour the essence of the cuisine while pushing it toward new and unexpected possibilities.
